Abstract

A complex preservation method prolongs the shelf life, while maintaining the quality of dry meat products cured ot heat treated in the new state. - The method includes an initial fungicide treatment followed by sealing the product in suitable packaging material under vacuum or in the presence of protective inert gas. - The packaging material is impervious to microbes. The outer surfaces of the packages are sterilised by UV light radiation. - This method satisfies health regulations and maintains palatability even after several storage at refrigerated or room temps.
