Abstract

ÓThe invention relates to the use of nonanoic acid as an antimicrobial, in particular antifungal agent, or as an additive, in particular to foods such as dairy products or fruit juices. A specific aspect of the invention relates to the use of nonanoic acid in cheese coatings. The subject of the invention is also cheese coatings containing nonanoic acid as an antifungal agent, the cheese provided with such a coating, and a composition containing nonanoic acid for providing such a coating. As the main nonanoic acid, it is applied on or near the surface of the food or evenly distributed in the food in an amount of 10-10000 ppm, especially 100-1000 ppm. Nonanoic acid is also used as an antimicrobial agent for the treatment of substrates or surfaces, especially for the treatment of substrates or surfaces that come into contact with food, for the protection of food, cut flowers and bulbs and tubers during transport and/or storage, in disinfectants and cleaning products, for the protection or treatment of wood, in cosmetics and skin care products, and in medicinal preparations for fungal infections and yeast infections , for example to prevent or treat Candida infection.
