Abstract

Gel-based food additives are prepd. by forming a sol from poly-galacturonic-acid-methyl -ester and sorbitol or invert sugar buffered with sodium-citrate, homogenising the sol at slightly elevated temp. with glycerol-mono-stearate, glycerol-mono-palmitate, sodium-stearate or sodium-palmitate taken up in propylene-glycol, and after cooling adding alcohol and natural or artificial flavouring accepted by the food industry. - The gel-based additives have structurising and stabilising effects and are a vehicle for aroma substances.
