Abstract
Description
A találmány stabil salátaöntet előállítására vonatkozik, víz, olaj, ízanyagok és stabilizálószer összekeverése útján.
Korunk táplálkozási szokásaiban egyre inkább előtérbe kerül a nagyobb rosttartalmú, energiaszegény élelmiszerek, például a nyers zöldségfélék fogyasztása. A nyers zöldségek íze azonban a legtöbb esetben kevéssé jellegzetes /pl. saláta vagy paraj/. A fogyasztók számára úgy tehetők vonzóbbá és változatosabbá, ha izüket bizonyos adalékanyagokkal kiegészítjük, harmónikussá tesszük. Az ízesítés egyik módja, hogy a nyers zöldségetösszekeverjük megfelelő ízanyagokat is tartalmazó salátaöntettel.
A szakirodalomban ismertetett salátaöntetek általában olaj a vízben emulziók, amelyek az adalék-anyagok különböző variációit tartalmazzák az elérni kívánt céltól függően.
A 4 129 663 sz. Amerikai Egyesült Államokbeli szabadalmi leírásból olyan folyékony, önthető salátaöntet ismerhető meg, amely fűszereket és stabilizáló anyagokat tartalmazó olaj a vízben emulzió, a salátaöntet stabilitását az öntet teljes súlyára vonatkoztatva 0,3-0,8 tömeg% xantán és 0,2-2,0 tömeg% pektin keverékével érik el. A stabilitásra jellemző viszkozitás a kiindulási kb. 1500—6000 mPa s értékről a terhelési vizsgálatok során 8—25%-kai csökken.
Salátaöntetek sűrítésére alkalmas keményítőmentes sűrítőszert ismertetnek a 2753 443 sz. NSZK-beli nyilvánosságra hozatali iratban.
A sűrítőszer 2—20 tömegrész xantánból
4—35 tömegrész propilénglikol-alginátból és 35—90 tömegrész mikrokristályos cellulózból áll. A kompozíció hasonló struktúrális és organoleptikus tulajdonságokat mutat, mint'a keményítőtartalmú, krémszerű salátaöntetek. Emellett stabilabbak felmelegítéskor, ellenállóbbak a fogyasztás-felmelegítés okozta sokkhatással és rázással szemben, továbbá amiláz enzimre nem érzékenyek.
A keményítőmentes sűrítőszer előnyös tulajdonságait a három íő alkotó együttes jelenléte biztosítja. A leírás szerint bármelyik komponens hiánya rossz minőségű terméket eredményezne vagy lehetetlenné tenné a sűrítőszer felhasználását.
A találmány célja olyan eljárás kidolgozása, amelynek segítségével harmonikus ízhatású, hosszú ideig minőségromlás nélkül eltartható és ezzel egyidejűleg amilázenzimre nem érzékeny salátaöntetet lehet előállítani. A komponensek megfelelő megválasztásával növelni kívántuk a saláta biológiai értékét is és ugyanakkor az ismert megoldásokhoz képest csökkenteni az emulzió stabilizálásához alkalmazott segédanyagok mennyiségét.
A találmány szerinti eljárás kidolgozására végzett kísérleteink során felismertük, hogy ha a komponensek meghatározott mennyiségét, megfelelő sorrendben, nagy nyíróerővel keverjük össze, akkor a salátaöntet stabilizálására elegendő a xantánt önmagában, 2
0,15—0,3 tömeg% mennyiségben alkalmazni. Az így kapott termék kiváló organoleptikus és stabilitási tulajdonságokkal rendelkezik.
Ez a felismerés azért meglepő, mert míg a 4 129663 sz. USA-beli szabadalmi leírásban stabilizálószerként használt xantán és pektin együttes mennyisége 0,5—2,8%, addig a találmány szerinti eljárásban a xantánt önmagában alkalmazva, 0,15—0,3% mennyiség elegendő ugyanolyan vagy nagyobb emulzió stabilitás elérésére. Meglepő a 27 534 443 sz. NSZK-beli szabadalmi leírás megállapításával ellentétben a tapasztalatunk is, hogy a xantán mellől a propilénglikol-alginát és a mikrokristályos cellulóz elhagyása nem jár semmiféle minőségromlással vagy használati hátránnyal.
A találmány eljárás stabil salátaöntet előállítására víz, olaj, izanyagok és stabilizálószer összekeverése útján oly módon, hogy 30—50 tömeg% vízhez hozzáadjuk turbulens keverés közben a salátaöntet vízoldható és vízben oldhatatlan komponenseit — előnyösen
3—5 tömeg% szénhidrátot, 0,5—3 tömeg% hidrolizált fehérjét, 2—6 tömeg% tojás sárgáját, 4—15 tömeg% ízanyagokat, adott esetben tartósítószert és/vagy antioxidánst-, majd a kapott vizes elegyhez állandó turbulens keverés közben hozzáadunk 35—45 tömeg% növényi olajat és 0,15—0,3 tömeg% növényi olajban diszpergáltxantánt,miközben a komponensek keverését vákuum alatt célszerűen 0,1-0,5 bar nyomáson végezzük és a kapott terméket kívánt esetben hőkezeljük.
A találmány szerinti eljárást előnyösen úgy hajtjuk végre, hogy keverővei ellátott tartályba adagoljuk a vizet és a vízben oldódó komponenseket. Ezt követően a vizes oldathoz keverjük a vízben oldhatatlan komponenseket.
Végül a rendszerhez keverjük a növényi olajat és a célszerűen tízszeres mennyiségű növényi olajban diszpergált xantánt.
A keverést az eljárás teljes ideje alatt olyan fordulatszámú és rendszerű keverővei kell végezni, amely a rendszerben turbulenciát hoz létre.
A nagy nyíróerejű keverés és a xantán hatására a szilárd részecskéket is tartalmazó víz-olaj emulzió néhány másodperccel a xantán beadagolása után homogén, tixotrop jelleget mutató krémszerű péppé alakul.
A keverést célszerűen vákuumban végezzük, hogy a rendszerbe levegő buborékok bekeverését megakadályozzuk. Az előnyös nyomástartomány 0,1-0,5 bar között van.
A találmány szerinti eljárást előnyösen szobahőmérsékleten, 2,5—5,0 pH értéknél hajtjuk végre.
A stabil víz-olaj emulzió létrejöttéhez elegendő 1—2 perc keverési idő.
A találmány szerinti eljárás úgy is végezhető, hogy tartósító hatású anyag nélkül készítjük a salátaöntetet. Ekkor célszerű a terméket 86—88 *C -on hőkezelésnek alávetni.

A kezelés időtartama a kezelt anyag geometriája alapján számítható.
A hőkezelés hatására semmiféle állományváltozás vagy a fehérje denaturálódása nem következik be.
A találmány szerinti salátaöntet előállításához felhasznált alapanyagok megegyeznek a salátaöntetekhez általában használt anyagokkal. A különböző zöldségekhez a harmonikus ízhatás eléréséhez különböző ízanyagokat használunk.
A salátaöntetben alkalmazott xantán lényegében hetero poliszacharid, amely 2:1:1:1 mólarányban mannózt, glükózt, glükoronsavat és acetilcsoportot tartalmaz.
Szénhidrát oldatok fermentációjával lehet előállítani Xanthomonas baktériummal, előnyösen a Xanthomonas campestris törzzsel.
A találmány szerinti eljárással előállított salátaöntet általános összetétele a következő:

A hígfolyóstól a krémszerűig változó konzisztenciájú termék állítható elő a víz-olaj arány illetve a xantán mennyiségének a megadott határokon belüli változtatásával.
A találmány szerinti eljárást az alábbi példákban ismertetjük:

Tormás salátaöntet
Keverővei ellátott készülékbe, 0,4 bar nyomáson, 395 g vízhez adagolunk állandó keverés közben 50 g cukrot és 50 g 10% ecetsav-tartalmú ecetet, 40 g tojás sárgáját, 16 g sót, 3 g zöldség és fuszerolajat,50 g reszelt tormát, 10 g hidrolizált fehérjét, 0,2 g butil-hidroxi-toluolt és 0,5 g nátrium-benzoátot a vízhez keverjük.
További állandó keverés közben 1—2 perc alatt hozzáadunk a vizes rendszerhez 357,8 g napraforgó olajat, majd 25 g napraforgó olajban szuszpendált 2,5 g xantánt.
Stabil szerkezetű víz-olaj emulziót kapunk, amely még a terhelési vizsgálatok után sem válik szét. A salátaöntet 12 napig 50°C-on végzett öregítés illetve négyszeres fagyasztás-melegítéssel végzett sokkhatás után mért viszkozitása a terhelés előtt mért értékhez képest 1—2%-kal csökken. Ez a csökkenés gyakorlatilag a méréshibán belüli érték.
Az alábbi példákban az előállítás körülményei megegyeznek az 1. példában leírtakkal, 5 csupán a salátaöntet összetétele tér el attól.

Az 1.—4. példa szerinti eljárással előállíg_ tott salátaöntetek stabilitására jellemző viszkozitás változást vizsgáltuk. A mérést Brookefield viszkoziméterrel végeztük a komponensek összekeverése után /kezdeti viszkozitás/ és 12 napos 50°C-on végzett öregítés után. Az eredményeket az alábbi táblázat tartal65 mázzá:

In our diet, the consumption of high-fiber, low-energy foods, such as raw vegetables, is becoming more and more important. However, in most cases the taste of raw vegetables is slightly characteristic / eg. salad or spinach. To make it more attractive and varied for consumers, we add harmonious ingredients to their flavors. One way of flavoring is to mix raw vegetables with a salad dressing that also contains the right flavors.
Salad dressings described in the literature are generally oil-in-water emulsions containing various variations of additives depending on the purpose to be achieved.
No. 4,129,663. U.S. Pat. No. 5,197 discloses a liquid pourable salad dressing comprising an oil-in-water emulsion containing spices and stabilizers, 0.3-0.8 wt. of pectin. The viscosity for stability is approx. From 1500 to 6000 mPa.s, it is reduced by 8 to 25% during load tests.
A starch-free thickener suitable for thickening lettuce dressings is disclosed in U.S. Patent No. 2,753,443. Disclosure in the Federal Republic of Germany.

It consists of 4 to 35 parts by weight of propylene glycol alginate and 35 to 90 parts by weight of microcrystalline cellulose. The composition has similar structural and organoleptic properties as starchy creamy salad dressings. In addition, they are more stable on heating, more resistant to shocks and shocks caused by consumption heating, and are insensitive to amylase.
The advantageous properties of the starch-free thickener are provided by the presence of the three constituents. The absence of any component as described herein would result in a poor quality product or render the use of a thickener impossible.
SUMMARY OF THE INVENTION It is an object of the present invention to provide a process for preparing a salad dressing which has a harmonious taste, is durable for a long time without deterioration in quality and is at the same time insensitive to amylase. It was also desired to increase the biological value of the lettuce by selecting the appropriate ingredients while reducing the amount of excipients used to stabilize the emulsion compared to prior art solutions.
In our experiments to develop the process of the present invention, it has been discovered that when a certain amount of the components are mixed in high order with high shear, xanthan alone is sufficient to stabilize the salad dressing.

The process of the invention is preferably carried out by adding water and water-soluble components to a stirred tank. The water-insoluble components are then added to the aqueous solution.
Finally, vegetable oil and xanthan dispersed in ten-fold quantities of vegetable oil are mixed with the system.
Stirring should be performed throughout the process with a speed and system mixer that creates turbulence in the system.
The high shear mixing and the xanthan water-in-oil emulsion containing the solids, within a few seconds of adding the xanthan, will turn into a homogeneous thixotropic creamy paste.
Stirring is preferably carried out under vacuum to prevent air bubbles from entering the system. The preferred pressure range is 0.1-0.5 bar.
The process of the invention is preferably carried out at room temperature, at a pH of 2.5-5.0.
A stirring time of 1-2 minutes is sufficient to form a stable water-in-oil emulsion.
The process of the invention may also be carried out by preparing a salad dressing without preservative. In this case it is advisable to heat the product at 86-88 ° C.

The ingredients used to make the salad dressing of the present invention are the same as those generally used for making salad dressings. Different vegetables use different flavors to achieve a harmonious taste.
The xanthan used in the salad dressing is a substantially hetero polysaccharide containing 2: 1: 1: 1 molar ratio of mannose, glucose, glucoronic acid and acetyl.

Liquid to cream-like consistency can be produced by varying the water-in-oil ratio and the amount of xanthan within the given limits.

Example 1
Horseradish salad dressing
To a stirred apparatus at 0.4 bar, add 39 g of water to 395 g of water while stirring constantly with 50 g of sugar and 50 g of 10% acetic acid in vinegar, 40 g of egg yolk, 16 g of salt, 3 g of vegetable and fuser oil, 50 g of grated horseradish. 10 g of hydrolyzed protein, 0.2 g of butyl hydroxytoluene and 0.5 g of sodium benzoate are mixed with water.
357.8 g of sunflower oil are added to the aqueous system with stirring for 1 to 2 minutes, followed by 2.5 g of xanthan suspended in 25 g of sunflower oil.
A water-in-oil emulsion with a stable structure is obtained which does not separate even after loading tests. The viscosity of the salad dressing after aging for 12 days at 50 ° C or after a shock of 4 times freezing-heating is reduced by 1-2% compared to the value measured before loading. This decrease is practically a value within the measurement error.
In the following examples, the preparation conditions are the same as those described in Example 1 except that the composition of the salad dressing is different.
