Abstract
The invention relates to a process used for producing a cold coffee beverage, at low temperatures and in a short time, with intense aromas, which beverage can be kept at room temperature for a long time. The procedure is as follows: a) placing and stirring water in a container/extractor (1) with ground raw material, b) applying a first air cycle with a vacuum pump (2) for five minutes maximum, c) pacifying the solution for a period of ten to sixty seconds, d) application of a second air cycle with a vacuum pump (2) five minutes maximum, e) recovery of aromatic components with a concentration cell (3), f) filtering with a filtration device (4) to obtain an extract, g) mixing by stirring the extract with the recovered aromatic elements and ascorbic or citric acid, h) treatment with ultra-high pressure (6) or pasteurization (11), i) packaging in bags and individual packages.
