Abstract

A water-olive extract is disclosed, comprising tyrosol, lingstroside, eleuropein aglycone, elenoiic acid and lingstroside dialdehyde. The extract does not contain hydroxytyrosol as the principal component. Said extract contains tyrosol and lingstroside as the principal components. The water-olive extract may used as a food additive. Use of said extract was found to improve at least one of the following metabolic syndrome and/or cardioprotective parameters: to decrease LDL-cholesterol concentration (mg/dl), to increase HDL-cholesterol concentration (mg/dl), to increase the HDL/LDL index and to revert the insulin hypersecretion in overweighted individuals.
