Abstract
The present invention relates to a method for determining oleocanthal and oleacein in olive oil. The Magiatis-Melliou method is based on the selective reaction of conjugated aldehydes, such as oleocanthal and oleacein, with reagents of the p-hydroxy-anthranilic acid type to form water-soluble coloured products which are determined in the aqueous phase either by means of the color intensity or by the absorbance in the visible spectrum. The initial calibration of the color scale is based on nuclear magnetic resonance spectroscopy determination.
