pparatus for the centrifugal extraction of two liquid components (1,3) with a different specific weight and a solid component (2) from pastes (1b) of oil-containing fruit such as olives and the like and/or from oil-containing residues, which comprises a drum (20) provided with substantially axial openings (22b) for outflow of the liquid component (3) with a greater specific weight and a screw feeder (30) arranged coaxially inside it, both rotating independently of each other, characterized in that the movement, in an axial direction, of the lizuid component (1) with a lower specific weight,from a zone (1a) for supplying of the paste/solid residue to a zone for extraction of the same lighter liquid component, in in the same direction as the movement of the solid residue (2) towards the associated outlet (10a).
