Essence A method comprises separating buttermilk, heating, coagulation of protein mass with addition of calcium chloride, ageing, separation of the buttermilk from the obtained nadughi, and after separating buttermilk the metallic iodine dissolved in 10% aqueous solution of potassium iodide is introduced into the cream in such a proportion that the total amount of iodine in one kg of nadughi made 0,2-0,3 mg. 3. Field of Application Food industry, in particular production of milk and milk products.
