A method comprises bolting grape seeds, passing them into the magnet trap, washing, roasting, extracting, drying the extract. The washing is effected by water acidulous by sulfurous acid up to 0,5% concentration. The roasting is effected under temperature 170-1750C during 15-20 minutes, extracting – under the proportion of raw and water 1:5 under temperature 125-1300C, under pressure 1,5-1,8 mPa during 80-90 minutes. The invention may be used in food industry, in particular production of food concentrates.
