Abstract

A confectionery product (candy) is made by subjecting a mixture of starch, a sugar, and water to simultaneous heat pressure and shearing action by means of a hot extrusion step thereby effecting a dissolution of the starch product and sugar with simultaneous mixing and mastication of the mixture with the resulting formation of a shape retaining plastic confectionery mass. The starch products include dextrins derived from corn, high amylose corn, sago, wheat, rice, sweet potatoes, sorghum, waxy sorghum, waxy maize, potatoes, tapioca, and amylose, amylopectin and their acetate esters and other edible derivatives. Sugars include dextrose, levulose, sucrose, lactose, maltose, sorbitol, and mannitol. The starch product comprises 300% to 10% by weight of the sugar content. Up to 50% plasticizer (based on the combined weight of starch and sugar) such as the polyhydroxy alcohols, glyerine and sorbitol, may be added to improve the plasticity of the mix. Other additives include colour, flavouring, humectants, preservatives and acidifiers. The inherent water content of the sugar starch mix may be sufficient to provide a mouldable mass, but water may be added to bring the content to 25% for soft candies. The starch product and sugar are mixed together, the p plasticizer and other water dispersible additives are dissolved in water, and sprayed on to the sugar-starch mix which is thoroughly agitated. The resulting mass is pelletized and fed to a heated screw extruder (180 DEG -360 DEG F.) where it is subjected to heat, shear and pressure and extruded into shapes. A torpedo head may be fitted into the extruder screw to obtain more intimate mixing.
