Abstract

Racemic pyroglutamic acid is prepared from the optically active acid by heating a mixture of water and 10 to 90% by weight based on the mixture, of optically active pyroglutamic acid to between 160 DEG and 220 DEG C., and if acidic or alkaline substances are present in the mixture keeping the molecular ratio of alkaline substances to pyroglutamic acid below 0.75, and the molecular ratio of acidic to pyroglutamic preferably below 1. The product may be hydrolysed by heating with acid or alkali, to racemic glutamic acid or its salts.
