Cheese is matured wrapped in material impervious to air or moisture and held under pressure in a collapsible rigid-walled container. The material may be metal foil or plastic film. The container may be a plywood box having two movable opposing sides 28, 29 surrounded by the other four sides 24-27 and held in compression on the cheese by steel tape 31 surrounding the box in notches 30. There may be an intermediate cardboard wrapping.
