Abstract

A stable papain derivative is prepared by preparing an aqueous extract of papaya latex, adding to the extract zinc ions, preferably as zinc chloride, sulphate or acetate, to form a zinc papain derivative, and removing the derivative to obtain a zinc papain derivative of substantially undiminished proteolytic activity. The zinc ions are preferably added to the extract in an amount equal to 270 to 300 milligrams of zinc ions per 100 grams solid content of the extract.
