In an hydraulic cylinder/piston type sausage filling machine a piston guide rod 8, non-circular in cross-section, prevents angular drift of the meat-expressing piston 3 in operation, and ensures that a cut-away or gash 6 at the top of the piston always registers with a sausage-meat extrusion port 7 when the piston is fully displaced. Two or more guide rods may be used, if desired, in which case these may have any cross-sectional shape including circular. The guide rod or rods extend from the bottom end 9 of the ram cylinder 10 through a corresponding aperture or apertures in the bottom 11 of the ram 4.
