A charged baking-pan is placed in a vertical column of heat, with the surrounding space open to the atmosphere, the heating below the pan being a maximum below the centre of the pan and tapering off to the perimeter and the open end of the pan receiving uniformly radiated heat. As shown, an appliance particularly for baking cakes comprises truncated conical reflector shells 10, 11 relatively adjustable by means of telescopic columns 16 which may be secured by a clamping screw 17. Shells 10, 11 may be chromed inside and contain respectively heating elements 13, 14, cone 10 also receiving a supporting grid 15. Element 14 may be adjustable, Fig. 3 (not shown).
