Abstract
Tea is infused in water or the like and the temperature of the infusion is lowered sufficiently to obtain a precipitate which is separated to obtain a sludge which is dried. The sludge may be powdered or left in or made into granule or block form and contains all the extractable vegetable matter and soluble solids of the original tea, the tannic acid flavouring and aromatic substances being left in the infusion. These substances or similar synthetic substances may be added to the sludge, e.g. after drying out of the infusion. The infusion may be carried out by the "cascade process" and the bulk of liquid may be reduced prior to cooling which is usually to about 32 DEG F., the dissolved p substances lowering the freezing point so that ice crystals are not formed. Preferably the sludge is separated by centrifuging but vacuum filtering or settling out and decanting off the liquid may be used. Precipitation may be assisted by adding to the infusion one or more liquids in which the sludge is insoluble, e.g. acetone or an alcohol. The sludge may be dried by drawing air or other gases therethrough or by compression between heated plates. After the precipitate has been separated from the infusion the liquid is mixed with a suspending-agent and the suspension separated, dried and mixed with the precipitate.
