Brewer's wort is passed through a boiling or cooking stage at a temperature above 220 DEG F., preferably between 240 DEG and 270 DEG F,, for a time t (seconds) which has a minimum value given by the equation log10t = (27,4 x 103)/T-37,6 and a maximum value given by the equation log10t = (18,18 x 103)/T-23,4, where T is the temperature in degrees Rankine (460 + DEG F).
