Abstract
A solid powdered food product consists substantially entirely of a water-soluble protein or protainaceous product and contains a substantially pure water-insoluble monoglyceride or sorbitan ester of a fatty acid. Glyceryl mono-oleate or sorbitan monopalmitate, and a complex of caacin and sodium glycerophosphate are the preferred ingredients. The ester can be used as a solution in, e.g., ether, chloroform or ethyl alcohol.
