Abstract

Fruits, vegetables and flowers are kept fresh by application to their surfaces, or selected parts thereof, of water or an edible oil containing a non-cationic surfactant. The surfactant is anionic, e.g. a sodium secondary alcohol sulphonate, a diamyl ester of sulphosuccinic acid, or non-ionic, e.g. sorbitan monooleate, polyethylene sorbitan esters of mixed fatty and resin acids, polyexyethylene sorbitan monopalmitate, an alkylated aryl polyether alcohol, an alkyl phenol ethylene oxide condensate. Concentrations of surfactant of 0.001-1 per cent may be employed. Examples are concerned with spraying freshly cut roses with aqueous surfactant solutions, immersing the stems of freshly cut roses in aqueous surfactant solutions, and coating tomatoes, pineapples, strawberries, apple-cucumbers, pears, lemons, peaches, apricots and rockmelons with aqueous surfactant solutions by spraying or dipping.
