Abstract

A small amount of an enzyme preparation capable of turning mannan to mannose is incorporated in an extract of roasted coffee before freezing. Mannanase, e.g. prepared from Aspergillus niger or Aspergillus oryzae, is suggested as the enzyme preparation. Between 0.0001 per cent and 3 per cent of the enzyme may be used.
