Abstract

Compositions having the appearance and flavour of pepper comprise a pungent substance, a natural or synthetic resin, a carrier, and at least one, preferably all, of woody, aromatic, citrus, phenolic, floral and putrid flavouring substances. The pungent substance is exemplified by naturally-occurring piperine, chavicine, piperettine and capraicin, and by synthetic 5-phenyl pentanoic acid piperidide and dipiperazonium salts of phenyl carboxylic acids, e.g. 5-phenyl-2-pentenoyl, 5-phenyl-3-pentenoyl and cinnamenyl-acryloyl diazonium salts. The carrier, exemplified by heated, crushed grain hulls, pulverized peanut shell, grain flakes, pulverized potato peel, and salt, confers the bulk and "feel" of pepper to the composition, and serves as a dispersing agent for the other ingredients. Woody flavourings are exemplified by cedrol, cedrol esters, cedarwood oil, sandalwood oil, vetivert oil, vetivone, a -ionone, vetivert acetate, Oregon fir balsam; aromatic flavourings by aubepine, vanillin, cinnamic aldehyde; citrus flavourings by citral and citronellal; phenolic flavourings by eugenol, phenol, cresol, salicylaldehyde; floral flavourings by nerol, menthol, menthone, carveol, carvone, caraway seed oil, hydroxy-citronellal, linalool, linalyl acetate, terpineol, b -ionone; putrid flavourings by indole, skatole, di-n-butylamine, Chlorophyll is preferably incorporated in the compositions; ingredients of natural pepper such as phellandrene, b -pinene and limonene may be incorporated.
