Abstract

736,186. Concentrating fruit juices &c. by freezing. COMMONWEALTH ENGINEERING CO. OF OHIO. July 24, 1953, No. 20632/53. Class 29. Aqueous solutions and suspensions, e.g. fruit juice, are concentrated by freezing in a container 10 having a set of vertical, internally-refrigerated cylinders 32 on which ice crystals are formed and from which the crystals are continuously removed by scrapers 29 engaging the side and bottom walls of the cylinder. The crystals and juice are continuously mixed together by a power-driven agitator 78. As shown, the scrapers are stationary and the cylinders are rotated by a chain engaging chain wheels 47. The cylinder has concentric refrigerant inlet and outlet pipes 55, 50. In a modification, the cylinders are stationary and the scrapers rotate about them, being driven from the shaft of the agitator 78 through gearing. The cylinders provide at least one square foot of heat-exchange surface for each gallon of juice being concentrated and the temperature difference between the inner and outer surfaces of the cylinders is from 5‹ to 7‹ F. The mixture of ice crystals and concentrate is discharged through an outlet 13 to a separator from which the concentrate goes through second, third and fourth containers for further concentration. The temperature difference between each pair of successive containers is from 5‹ to 7‹ F.
