Class 14(2) A mixture of barley malt, with or without non-malted starchy material, e.g. corn or rice, and heated water is fed continuously by a pump 9 from a mixing vessel 4 through a pipe 8 to the lower part of a tower 10, the temperature of the mixture and its rate of flow up the tower being so regulated that the required enzymic conversion is completed by the time the mixture rises to the discharge end of the tower, and the wort is separated continuously from the solids as the mixture discharges from the tower. As shown, the vessel 4 is supplied from a mashing machine 2, fed with malt at 1 and warm water through a pipe 3, and, as required, with other goods in a moistened state through a pipe 5. The water/solids ratio of the mixture passing up the tower is reduced by returning liquid from a chamber 12 below a foraminated plate 11 through a pipe 13 to the vessel 4. The mixture is discharged by a conveyer 14 over a foraminated floor 15 through which the wort drains into a vessel 16 having a run-off pipe 17. The solids are sprayed with water at a temperature of about 175‹F. by a sparge 18 before discharging at 27, the weak wort produced draining into a vessel 19 having a run-off pipe 20. The weak wort may be blended with the stronger wort, returned to the mixing vessel 4 or drawn off by means of valves 22, 24, 26.
