Class 121 In making, starch from maize, rice, wheat or other cereals the starch-bearing material, suspended in a liquid, is purified and washed in two or more stages in centrifugal separators from which the separated fractions, e.g. a starch concentrate and a predominantly impure fraction are discharged continuously, the second stage and any succeeding stages, which may if necessary include a de-watering stage, being carried out at a temperature higher than that of the material admitted to the first stage. The temperature of the starch concentrate may be raised, e.g. above 40‹C, at or after the first stage and may be kept constant or raised still further in subsequent stages, but the temperature should never exceed the gelatinization temperature for any appreciable time. The concentrate may be subjected to mechanical working after each separation and may be heated by the washing liquid. When heated in the bowl of the separator, the temperature of the concentrate may exceed the gelatinization temperature for the period the concentrate is in the bowl, its temperature thereafter being reduced below gelatinization temperature.
