Abstract

In the production of sweetened condensed milk, the milk is subjected to a temperature above 265 DEG F for a short time insufficient for discolouration after the milk or the production of a heat flavour therein before the sweetening and concentrating are undertaken. An example is concerned with continuous production of sweetened condensed milk having 8.6 per cent of fat, 20.0 per cent of milk solids-not-fat, 45.7 per cent of sugar and 25.7 per cent of water by the vacuum evaporation of a mixture of milk enriched with added cream and a 65 per cent sugar syrup pasteurized at 190 DEG F, the milk being heated at 200 DEG F by flow through a tubular heater, then to 300 DEG F by direct injection of steam, and, after 10 seconds, mixed at the evaporator inlet with the sugar syrup.
