Abstract
An emulsifying agent containing the residues of a polyhydric alcohol, a higher fatty acid and a polybasic carboxylic acid is prepared by heating a mixture of suitable components to give a product soluble in oil but insoluble in water, which can produce by the "steam emulsion test" an emulsion of 20 c.cs. of water in 20 c.cs. of a solution of 0.25 per cent strength of the product in neutral freshly refined ground nut oil from which emulsion not more than 5 c.cs. of oil separate at 93-95 DEG C. in 20 minutes. Starting materials are preferably partial or complete esters of a polyhydric alcohol and a higher fatty acid or a mixture of such substances. Polybasic organic acids include aliphatic carboxylic acids or their anhydrides, but they should not contain too many OH groups in their molecule unless such groups are suitably blocked. Specific acids are maleic, fumaric and sebacic, especially for manufacturing edible oil and fat emulsions. Polyhydric alcohols mentioned are glycol and glycerol, but a triglyceride is the preferred starting material. Free acid present in the product is lessened by neutralization with ethanolamine. An addition of glycerol after heating of the components has begun improves the product. The starting materials are first heated at 200 DEG C. for 2 hours, then increased slowly to 240 DEG C. The polyhydric alcohol is slowly added but with the mixture at a temperature of 150-180 DEG C. In examples: (1) the monoglyceride of ground nut oil and sebacic acid, and (2) ground nut oil and maleic anhydride and glycerol, are heated together.
