[Class 29] [Also in Group II] A dough mixing machine is provided with cooling means which keep its walls slightly above 0‹C. when no mixing is taking place and slightly below during mixing, in order to develop the gluten sufficiently without overheating the dough. The mixing container 10 is jacketed and the jacket is divided by partitions 33, 34, Fig. 2, into a series of interconnected passages, alternate passages opening into the next at opposite ends. Cooling fluid is admitted to this expansion chamber by a header 48, Fig. 1, at the top of each side of the jacket, and is fed out through a suction opening 65 to a compressor 42. A flexible coil 46 in the inlet pipe 45, and a similar coil 54 in the outlet pipe 51 enable the container to be tilted for discharge. The stirrers 12 are rotated by means of a motor 17 which is switched on by means of a switch 19, 20. The contact 19 of this switch is mounted on a centrally-pivoted rod 18, the ends being insulated from each other. At the end 27 of this rod are two contacts which may engage either of contacts 28, 29 to switch into the compressor motor circuit either of two thermostatic devices 56, 55. In one postion shown in Fig. 1, the circuiit of motor 17 is broken, that is, no mixing is taking place, and the thermostat 55 is energized. This thermostat is set to operate the motor 39 of the compressor 42 so that the temperature of the container is slightly above 0‹C. On throwing the switch 18, to bring the motor into action, the thermostat 56 is energized, and this is set to produce a temperature of slightly below 0‹C. A valve 63 in the inlet pipe 45 is operated by an electromagnetic device when the circuit to motor 39 is broken.
