[Class 49] [Also in Group XXXVI] Fish, meat, poultry, &c. is preserved by passing an electric current therethrough and then freezing. Before passing the electric current, the fish, &c. may be treated with an agueous salt solution. The current may be A.C., of 220 volts, passed for 1 to 2 minutes. Two forms of apparatus for carrying out the invention are described .In the first, Fig. 1, the fish are placed in a stationary box 1 of rubber, "Bakelite", (Registered Trade Mark), or other non-conducting material, or of wood having an insulating lining 8, and electrodes 2, 2<SP>1</SP>, pass through insulating sleeves 6, 6<SP>1</SP> to conductors 4, 41. Time switches may be inserted in the circuit. In the second, Fig. 2 (plan view), the fish &c. are placed in insulated boxes 10 secured to or resting on an endless, travelling, non- conductive belt 11, and the electrodes 20, 20<SP>1</SP> have brushes 21, 21<SP>1</SP> which pick up current from conductor rails 24, 24<SP>1</SP>.
