Abstract

513,455. Mashing. BERTEL, R. April 11, 1938, No. 11075. [Class 14 (ii)] A raw starch mash, such as of cereals, e.g.' barley, maize, rice, millet, potatoes, starch or Jerusalem artichokes, is treated with pancreatic ferments and then added to a diastatically active malt mash which is, allowed to saccharify and then treated as usual. Up to 50 to 60 per cent. of raw starch may be thus incorporated. The raw starch mash may be gelatinized as by heat before treatment with the ferment.
