Abstract
Wafers or waffles are produced by applying the raw dough or paste to a sheet of metal foil and then baking the dough together with the foil. Alternatively, the foil may be placed on the dough which is then baked, or the dough may be baked between two pieces of foil. The foil may be readily stripped off before the wafer is eaten. Wafers thus produced retain their freshness and, when used as the outside layers of wafer confectionery, serve also to keep the confectionery itself fresh. Wafer baking irons may be used to produce the wafers, the foil being placed on the lower iron to receive the dough poured thereon, or the dough may be poured on the lower iron and the foil placed on the dough, or both upper and lower pieces of foil may be positioned before the irons are closed.
