Abstract
A food product is prepared by heating honey to pasteurizing temperature to destroy any yeast therein, cooling, allowing it to crystallize, mixing the crystallized honey with butter and homogenizing the mixture. The honey may be heated to about 120 DEG F., strained, pasteurized by heating to 140-160 DEG F., e.g. to 158 DEG F. for 10 mins., quickly cooled to 90 DEG F. or below, and finely crystallized seed honey is added. The seeded honey is placed in containers and kept at a constant temperature between 40 DEG and 60 DEG F. until complete crystallization has taken place. The crystallized honey and the butter, of which preferably 10-50 per cent is used, are mixed preferably by passing several times through a domestic meat grinder. The mixture is finally passed through a homogenizer which may consist of three plungers and cylinders which act on it successively so that it is at a pressure of 1000-4000 lb. per sq. in. in the final cylinder from which it is abruptly discharged to a low pressure through a small orifice.
