Abstract

<PICT:0470083/III/1> In emulsifying-apparatus, pressure produced by relative movement of a piston and cylinder forces the material to be emulsified through two or more apertures arranged to form jets which impinge on one another or which impinge against an obstruction, and enter a delivery tube. Externally adjustable means are provided to adjust the extent of the apertures to vary the thickness of the cream and to allow the apertures to be freed if they become choked. According to the arrangement shown in Fig. 1 a cylinder C<1>, having an agitator D attached, and fitting over a tubular piston E, is reciprocated by handle B. The material in the container enters through apertures f<4>, axial passage f<5>, past ball valve H and is force out <PICT:0470083/III/2> <PICT:0470083/III/3> <PICT:0470083/III/4> through holes j in a delivery tube J fitted to the top of the cylinder. These holes are diametrically opposed so that the jets impinge and their area is regulated by a plunger K operated by milled nut k. The axial passage f<5> is continued through the ball and socket joint e and f and is closed by the externally operated conical valve G, which permits the de-salting of the butter used for making artificial cream by means of hot water. In the emulsifying valve shown in Fig. 2, the material is forced through holes c<9> and the jets impinge against the opposite wall of an annular chamber e. The jets are varied by movement of a plunger K. Fig. 3 shows a device similar to that shown in Fig. 1 except that the tubular piston E is hinged to the tubular fitting F and the delivery pipe J is fixed in a thimble j<1> which is screwed into the cylinder head. Opposed apertures j are provided in the end of the thimble. In the construction shown in Fig. 4, a solid piston E<2> is used and is linked to the handle B. The material is drawn from the container through a openings c<8> and is forced into an annular chamber c<10> from which it passes through apertures c<11> into a delivery passage N formed in a screw plug n which adjusts the size of the openings c<11>.
