Abstract
In producing a meat extract from whales, seals, and other mammiferous sea animals the raw material prior to extraction by cooking in water is dried by heating in a liquid medium having a higher boiling point than water for instance in animal oil. The meat extract is obtained as a dilute solution which is evaporated to a pasty mass which is sold as meat extract or is treated further to produce bouillon cubes or the like. The Specification as open to inspection under Sect. 91 comprises also the preparation of extracts from meat generally and from fish, and by evaporating the extract prepared from raw undried meat, drying, and extracting the residue. The extraction may be effected in cold or tepid water. Drying may be effected in the same kind of oil as is contained in the material, and the dried material may be treated with a solvent for fat extraction and the residue heated, preferably in vacuum in oil or fat, e.g. vegetable oil or hydrogenated fat, and pressed and extracted to remove fat, and is then extracted to give a meat essence. The solid albuminous residue left may be dried and added to pastry, macaroni, vegetables, meat dishes, &c., or used as a food for animals. This subject-matter does not appear in the Specification as accepted.ALSO:The Specification as open to inspection under Sect. 91 comprises the use, as a food for animals, of the dried albuminous residue left after the production of an aqueous extract of meat or fish by a process in which the raw meat or fish is, prior to extraction, dried in a bath of a liquid medium having a higher boiling point than water, preferably an oil. The starting material may also consist of an extract, prepared from undried raw meat or fish, which is evaporated, dried and the residue extracted. The starting material after drying and prior to extraction may be treated to remove fat. This subject-matter does not appear in the Specification as accepted.
