321,448. Frozen Food Products, Ltd., and Penfold, A. H. Aug. 9, 1928. Preserving vegetables. - Vegetables, more especially the more costly varieties such as asparagus, artichokes, and peas, are preserved by coating them with dextrose and then keeping at a temperature below 32‹ F. The vegetables may first be subjected to a sharp freezing at -15‹ F. and are thereafter maintained in cold storage. For the treatment, the vegetables may be packed in boxes &c. in layers separated by layers of dextrose, or they may be placed on dextrosecovered shelves and then covered with dextrose. Asparagus is preferably stored upright in a basket or other container, separate rows being enclosed in greaseproof paper.
