Restoration of preserved food.-A machine for desalting salted fish and meat, consisting of a receiver d mounted on trunnions b to facilitate discharge a stirring apparatus s, a water-supply and a water discharge, is characterized by the shaft g of the stirring-apparatus passing through the bottom of the receiver on which the driving mechanism for the stirrer is secured. As shown, the driving-motor m is coupled to the shaft g by worm-gearing l, k and is carried by a plate n secured, e.g. by welding to the bottom of the receiver. The shaft g is journaled in a stuffing- box i, formed in a socket e, and in a bushing f inserted from above into the socket e and held against rotation, the collar h of the shaft g resting on the bush f. A sieve bottom q is carried on a hub o having radially projecting arms p, the hub being slipped over the bush f. The upper end of the shaft g is non-circular, e.g. square, and the hub t of the stirring blades s is fitted on this square, a lifting-loop being provided. The hub t may be held on the shaft, e.g. by spring means, to prevent it from falling off when the receiver is inverted for discharge by the worm gearing u, v. A drain cock is fitted in the bottom of the receiver and an overflow pipe rises from the bottom, outside the receiver, and is surmounted by an inverted U-shaped pipe which telescopes into it and is adjusted to regulate the water level. The U-shaped pipe is perforated at its highest point to prevent it from acting as a syphon.
