Coating confectioners' goods.-Confectionery is coated by depositing thereon a coating-substance, one portion of which, forming the outside of the coating, is in a " grained " or partly crystallized condition, the graining of the outside layer being effected by lowering its temperature. As shown in Fig. 5, the flooding-tank c, jacketed at c<1> for the circulation of a warm tempering-medium, is provided with an outlet c<2> above the coating conveyer h. Adjacent to the outlet c is provided cooling-means c<3> which may be a jacket or one or more pipes containing water or cool air. The outlet is thus heated on one side and cooled on the other, the material issuing having thus a warm or " ungrained " layer y and a cooled or " grained " layer x which latter forms the exterior of the coating. The cooling-means produces a mass of solid coating-material w adjacent to the outlet. In a modification, Fig. 1, the invention is applied to a feeding-device as described in Specification 227,954; the material which has been acted on by the mixers a<1> and the cooling-jacket a<4>, passing over a weir a<3> into a delivery vessel b having a heated jacket b<1> at one side of the outlet. Alternatively, certain of the plates b<2> may be heated. In another modifi. cation, the outlet of the jacketed flooding- vessel leads to a cooled roller which cools one side of the falling stream, or a hot roller and a. cold roller, one on each side of the stream, may be used. The rollers are cleaned by scrapers, mutually inclined to form a funnel. In a further modification, the material issuing from the flooding vessel is cooled on one side by an air blast. The material which passes through the pervious conveyer h is reheated and reconditioned and returned to the vessel c, the reconditioning being effected without " graining " the material. As shown in Fig. 5 this is effected by collecting the material in a warm jacketed trough f from which it passes between heated rollers f<1>, f<2> which may revolve at different speeds. The lumps are thereby liquefied and the rollers are cleaned by scrapers. The material passes to a jacketed trough f<3> from which it is elevated by a worm conveyer f<4> in a jacketed casing f<6> in which it is heated or cooled as desired and from which it is discharged either directly into the flooding vessel c or into a hopper f<7> having exit rollers f<8> jacketed for a warm medium. Scrapers f<9> are provided. The flooding tank is vibrated by the shaker apparatus j, j<1>, or by means described in Specification 227,954. The cores must be sufficiently warm to ensure that solidification progresses from the exterior towards the interior. When several coatings are applied, the method is only used in the final coating.
