Biscuits; making wafer biscuits.-Apparatus for baking wafers, biscuits and like articles comprises a series of electrically heated hollow pans or baking-plates stacked one above the other so that each pan, except the top and bottom pans, is in contact with the batter or the like on both the top and bottom surfaces. In the construction described, the pans are arranged in a frame comprising a base plate 69, sockets 17 and vertical guide posts 18 - - 21 screwed or otherwise fixed therein. The pans have brackets 22 - - 25 projecting from their corners, said brackets being shaped slidably to engage the posts 18 - - 21, and are extended to form handles 26, 27 the bars 30 of which are covered by wooden tubes 31 positioned bv pins 32. The pans are preferably shaped as shown in Fig. 3, with a. flat lower baking surface 34 and an upper baking surface. 33 with an upstanding rib 35 to prevent the batter from flowing away. Any suitable electric heater may be used, that shown in Fig. 3 being a series of insulating tubes surrounded by resistance wire. Two heaters of the nichrome-ribbon or plate type may be used in each pan, one heater for each baking surface separated by a layer of insulating material; or one such heater may be used in which case the heater would be embedded between two thick metal plates which distribute the heat uniformly. In Fig. 3, the heater cavity 39 is fitted with asbestos board 38 and mica sheets or metal plates may be interposed between the heater and the plates 33. 34. The top and bottom pans are suitably modified to be heated on one face only, and the edges of all the pans are, as much as possible, covered with insulating- material 50. The two ends of the heating- resistances are connected to conductors 51, 52 enclosed in porcelain tubes 53, 54 projecting from one edge of the pan, and jaws 55, 56 are provided to receive the blades 59, 60 of a knife switch common to all the pans. The blades 59, 60 are connected by vulcanite cross-bars and the switch is pivotally mounted and is operated by a suitable handle.
