Abstract
A method of dispensing a draught beverage comprises delivering the draught beverage into a drinking vessel, the delivered beverage including a suspension of fine particles which provide nucleation sites which can encourage the formation of ice in cooled beverage and which nucleation sites can be bubbles of gas hitherto dissolved in the beverage. The particles are preferably fine particles and can be yeast particles when the beverage is alcoholic such as a cask beer which has not been cask conditioned to remove said yeast.
Description
DISPENSING A BEVERAGE
This invention concerns a method for dispensing a draught beverage, more particularly for dispensing a cooled draught beverage and the dispensed beverage.
According to a first aspect of the invention there is provided use of a suspension of particles in a draught beverage to provide nucleation sites in the beverage when dispensed.
According to a second aspect of the invention there is provided a method of dispensing a draught beverage which method comprises delivering a draught beverage into a vessel which beverage comprises a suspension of particles which particles provide nucleation sites.
The vessel may be a drinking vessel, for example a glass.
The particles in the suspension are preferably fine particles. They are preferably not so large that they are perceptible by the consumer of the beverage on consumption and not so small that they cannot act as nucleation sites.
The draught beverage may be cooled prior to delivering into the vessel, for example using beverage cooling means in a beverage dispensing system which may convey beverage from a supply of beverage to a dispense tap or a font at, for example, a drinks bar. The beverage may be non-alcoholic or alcoholic. For example, an alcoholic beverage may be a beer, for example a lager or an ale, stout or porter or the alcoholic beverage may be cider. Where the beverage is alcoholic, the suspension is preferably a suspension of yeast particles or"chill haze"appearing in the cool beverage. The suspension of yeast particles may be obtained in a
cask beverage for example a cask beer, which has not been conditioned, i. e. a cask beverage which has not been treated so as to remove yeast from the beverage or cask conditioned. The beverage preferably has a water content and/or a dissolved gas content. The dissolved gas may be nitrogen and/or carbon dioxide.
One advantage of providing nucleation sites in a beverage is that they are believed to promote the formation of ice in the beverage, especially when the beverage is cooled. They may also contribute to or assist in formation of a head on the beverage. The nucleation sites may be formed by bubbles of gas which had been dissolved in the beverage.
Attention is drawn to two International patent applications, namely
International Application No. PCT/GB99/03824 (published under No.
Wool/36582) and International Application No. PCT/GB99/01551 (published under No. WO 99/60092). Any individual feature or any combination of such features of any beverage disclosed in either of those
International Applications, and any method or apparatus or part of any method or apparatus disclosed in either of those International
Applications, may be utilised in the dispense of beverage which is the subject of this current application.
Claims (34)
1. A method of dispensing a draught beverage comprising delivering a draught beverage into a vessel which beverage comprises a suspension of particles which particles provide nucleation sites.
2. A method as claimed in Claim 1, in which said particles in the suspension are fine particles.
3. A method as claimed in Claim 1 or Claim 2, in which the beverage is cooled prior to delivery into the vessel.
4. A method as claimed in any one preceding claim, in which the beverage is delivered into the vessel using a dispense tap or font.
5. A method as claimed in any one preceding claim in which the draught beverage is non-alcoholic or alcoholic.
6. A method as claimed in Claim 5 in which the draught alcoholic beverage is a beer or cider.
7. A method as claimed in Claim 6 in which the draught beer is lager.
8. A method as claimed in any one of Claims 5 to 7, in which said suspension is a suspension of yeast particles.
9. A method as claimed in Claims 3 and 8, in which the suspension appears as a chill haze.
10. A method as claimed in Claim, 8 or in Claim 9, in which the draught beverage is a cask beverage which has not been cask conditioned.
11. A method as claimed in Claim 8 or in Claim 9, in which the beverage has not been treated prior to dispense, to remove aforesaid yeast particles.
12. A method as claimed in any one preceding claim, in which said beverage comprises a water content and a dissolved gas content.
13. A method as claimed in Claim 12, in which the dissolved gas comprises nitrogen and/or carbon dioxide.
14. A method as claimed in Claim 12 or in Claim 13, in which said nucleation sites promote formation of ice in the dispensed beverage.
15. A method as claimed in any one of Claims 12 to 14, in which said nucleation sites contribute to or assist in formation of a head on the dispensed beverage.
16. A method as clamed in any one of Claims 12 to 15, in which aforesaid nucleation sites are formed by bubbles of dissolved gas.
17. A method as claimed in any one of the preceding claims in which the vessel is a drinking vessel.
18. A method as claimed in Claim 17, in which the drinking vessel is a glass.
19. A method as claimed in Claim 1 and substantially as hereinbefore described.
20. Use of a suspension of particles in a draught beverage to provide nucleation sites in the beverage when dispensed.
21. Use as claimed in Claim 20, in which said particles in the suspension are fine particles.
22. Use as claimed in Claim 20 or Claim 21, in which the draught beverage is non-alcoholic or alcoholic.
23. Use as claimed in Claim 22, in which the draught beverage is a beer or cider.
24. Use as claimed in Claim 23, in which the draught beer is lager.
25. Use as claimed in any one of Claims 22 to 24, in which said suspension is a suspension of yeast particles.
26. Use as claimed in Claim 25, in which said beverage is cooled and the suspension appears as a chill haze.
27. Use as claimed in Claim 25 or in Claim 26, in which the draught beverage is a cask beverage which has not been cask conditioned.
28. Use as claimed in Claim 8 or in Claim 9, in which the beverage has not been treated prior to dispense, to remove aforesaid yeast particles.
29. Use as claimed in any one of Claims 21 to 28, in which said beverage comprises a water content and a dissolved gas content.
30. Use as claimed in Claim 29, in which the dissolved gas comprises nitrogen and/or carbon dioxide.
31. Use as claimed in Claim 29 or in claim 30, in which said nucleation sites promote formation of ice in the dispensed beverage.
32. Use as claimed in any one of Claims 29 to 31, in which said nucleation sites contribute to or assist in the formation of a head on the dispensed beverage.
33. Use as claimed in any one of Claims 29 to 32, in which aforesaid nucleation sites are formed by bubbles of dissolved gas,
34. Dispensed draught beverage in a drinking vessel wherein said beverage has been dispensed by a method as claimed in any one of Claims 1 to 20, or dispensed draught beverage in a drinking vessel wherein there has been a use of a suspension as claimed in any one of Claims 21 to 33.
