Abstract

A roasting rack is disclosed which supports meat in a curved form. Notches 1 allow securing of meat by means of string etc. Connectors 3, 4 provide for non-rotary coupling of similar racks (Fig 2).

Description

2332364 Roasting Rack This invention relates to a rack for holding food
during cooking and carving.
Roasting racks help the cooking of joints of meat, by aiding heat transfer into the joint and allowing fats and juices to escape into the surrounding pan during the cooking process. For large joints the skeleton of the animal acts as a natural roasting rack, and additionally provides mechanical support of the meat joint during carving.
However in some countries health regulations may prevent joints being sold with the skeletal bones in place.
According to the present invention there is provided a combined roasting and carving rack comprising a support shaped so as to hold a meat joint in a manner similar to the removed natural skeleton, means are provided for aiding the securing of the meat to the support and for joining similar supports together to accommodate larger pieces of meat. The coupling mechanism prevents rotational movement between joined supports, provides adequate mechanical stability of joined sections during cooking and allows easy separation of joined sections during the carving process. The shape of the support together with integral feet provides mechanical stability of the joint during cooking and carving, allows heat transfer by conduction and convection and keeps the joint above escaping juices and fats. The support is constructed from material with similar or better thermal transfer characteristics to bone.
A specific embodiment of the invention will now be described by way of example with reference to the accompanying drawing in which:- Figure 1 shows in perspective a single support; Figure 2 illustrates a method of coupling two supports together; and Figure 3 shows two supports coupled together, with a joint of meat resting on them Referring to the drawing the support comprises a shaped section designed to support the meat joint in a similar manner to the natural skeleton. Notches 1 or similar features are provided to aid the securing of the joint to the support by means of a loop of string or similar material. Feet 2 are provided to aid mechanical stability and to assist in heat transfer by conduction and convection as well as king the joint above escaping juices and fats.
A male 31 female 4 coupling mechanism allows supports to be joined together as shown in Fig 2. The shape of the coupling mechanism prevents rotational movement between coupled sections, but allows easy removal of a section for instance during carving.

Claims (5)

Claims
1. A combined roasting and carving rack comprising a support shaped so as to hold a meat joint in a manner similar to the removed natural skeleton of the meat joint.
2. A combined roasting and carving rack as claimed in Claim 1 wherein means are provided by way of notches or similar devices for aiding the securing of the meat to the support
3. A combined roasting and carving rack as claimed in Claim 1 or Claim 2, wherein a coupling mechanism is provided for joining similar supports together.
4. A combined roasting and carving rack as claimed in Claim 3 wherein the manner of the coupling mechanism prevents rotational movement between the joined sections
5. A combined roasting and carving rack as claimed by any preceding claim wherein the support is provided with integral feet in order to assist with heat transfer to the joint and to keep the joint above escaping juices and fats A combined roasting and carving rack substantially as described herein with reference to figures 1-3 of the accompanying drawing.
