Abstract

The use of hexa-3 cis, 5-dien-1-ol as a perfume ingredient for the preparation of perfumes and perfumed products, and for the aromatization of foodstuffs, beverages, pharmaceutical preparations and tobacco imparts an aroma of a green, vegetable type.

Description

SPECIFICATION The use of hexa-3cis, 5-dien-1-ol as a perfuming and flavouring agent This invention relates to the field of flavours and of perfumery. In particular, it relates to the use of hexa-3cis, 5-dien-1-ol as a perfume ingredient for the preparation of perfume and perfumed products, and for the aromatization of foodstuffs, beverages, pharmaceutical preparations and tobacco.
Moreover, the present invention relates to a perfume or flavouring composition which contains hexa-3cis,5-dien-1 -ol as a perfuming or flavouring ingredient. The invention also relates to a foodstuff or beverage containing hexa-3cis,5-dien-1-ol as a flavouring ingredient.
It has been found that the said hexa-3cis,5-dien-1ol has interesting organoleptic properties and that it can therefore be advantageously used as a perfume and/or flavouring ingredient. In particular, it developes green, vegetable-type gustative and olfactive notes. In the field of the flavours especially, it imparts to foodstuffs or beverages a taste and an aroma of a green, vegetable type, e.g. that reminiscent of tomatoes.
Hexa-3cis,5-dien-1 -ol can be prepared according to the method described by Meinwald and Nozaki in J. Amar. Chem. Soc. 80, 3132 (1958).
The invention is illustrated by the following example: Example A vegetable broth type drink was prepared by dissolving a commercial concentrate (24 g) in 1 litre of boiling water.
One portion of the thus obtained drink was flavoured with hexa-3cis,5-dien-1-ol at a level of 10 ppm, and its taste was judged by a panel of experts by comparison with a non-flavoured control. It was found that the flavoured drink had a very pleasant vegetable note of the tomato type which was lacking in the control.

Amended Claims 1. The use of hexa-3cis,5-dien-1-ol as a perfume ingredientforthe preparation of perfumes and perfumed products, and for the aromatisation of foodstuffs, beverages, pharmaceutical preparations and tobacco.
2. A perfume and/or flavouring composition containing hexa-3cis,5-dien-1-ol as a perfuming and/or flavouring ingredient, other than a simple mixture of hexa-3cis,5-dien-1-ol alone with a common solvent or carrier.
3. A foodstuff or beverage containing hexa 3cis,5-dien-1 -ol as a flavouring ingredient.

In particular, it relates to the use of hexa-3cis, 5-dien-1-ol as a perfume ingredient for the preparation of perfume and perfumed products, and for the aromatization of foodstuffs, beverages, pharmaceutical preparations and tobacco. Moreover, the present invention relates to a perfume or flavouring composition which contains hexa-3cis,5-dien-1 -ol as a perfuming or flavouring ingredient. The invention also relates to a foodstuff or beverage containing hexa-3cis,5-dien-1-ol as a flavouring ingredient. It has been found that the said hexa-3cis,5-dien-1ol has interesting organoleptic properties and that it can therefore be advantageously used as a perfume and/or flavouring ingredient. In particular, it developes green, vegetable-type gustative and olfactive notes.
