Abstract

Cooling fish and meat.-The fish or cuts of meat are packed tightly and in regular .and close formation in a deep narrow container 1 so as to minimize air pockets, and the container is then immersed in a refrigerating liquid maintained out of contact with the fish and sufficiently cold to effact rapid freezing before appreciable loss of moisture by evaporation occurs. The fish may be packed in an open scoop-shaped form 8, covered by an enclosing lid, and then inserted through the open top 6 of the container. The container is constructed as a three-walled vessel with its sides converging from the open end. The pan 8 is drained by perforations 10 and 'by a false bottom 11 perforated at 12. In the cooling operation, the containers are inserted, in a chamber 4 to rest on a false bottom 5 and are spaced by partitions 7. The cooling-liquid level A is. positioned above the level B of the tops of the pans 8 but below the level of the upper edges of the containers. A number of cans 1 may be arranged in a rack for immersion in the cooling liquid.
