Abstract
5111. Marks, E. C. R., [Victor Chemical Works]. Feb. 27. Baking-powders; self-raising flours.-Relates to a baking-powder or baking-acid in which mono-calcium phosphate is the main acidic constituent which reacts with a carbonate tn liberate carbonic acid gas, and comprises the introduction of an alkali salt which reacts with mono-calcium phosphate to form a primary alkali phosphate. Disodium phosphate, a primary or secondary sulphate, a primary or secondary tartrate, a primary, secondary or tertiary citrate and meta- or pyrophosphate may be employed. The following equations indicate the reactions : - The preparation may take the form of a baking- powder, self-raising flour, or the form of a wet dough mixed ready for baking. In the lastmentioned form, the salt employed may be in the hydrated form; in the others, the salt used should be non-hygroscopic. In the baking- powder, the materials and relative percentages are preferably as follows:- Materials. Baking powder. Baking acid. Mono-calcium phos- 30 per cent 60 per cent phate.
