Abstract

Steam cooking-apparatus. - In apparatus for extracting fruit juice by means of steam, the water-vessel and the juice-receiver are separated by a partition, the steam generated in the watervessel passing into the superposed fruit-containing receptacle, while the walls of the juicereceiver are in contact with the outer air. In the form shown in Fig. 1, the cylindrical vessel 1 is divided by a partition 2 into a waterchamber 3 and a juice-collecting chamber 4, the bottom of the latter chamber being raised so as to prevent undue heating when the vessel is placed on a hot-plate. The fruit-vessel 6 supported on lugs 5 over the vessel 1 has one half of its base perforated, and the other half solid and provided with inclined grooves 8. The vessel 6 is enclosed by a cover 15 secured to a rim on the upper edge of the lower vessel. Steam generated in the chamber 3 passes into the fruit vessel from the top and through openings 9, and the juice extracted falls directly into the vessel 4 or is guided thereto by the grooves 8. The fruit may be inclosed in a filtering-cloth 16, and a second cloth 17 may be placed over the chamber 4. In a modification, the whole of the base of the fruit-vessel is perforated and an inclined plate is placed over the water-vessel 3. In the form shown in Fig. 4, the annular juice-receiver encloses a deeper water-chamber 3, from which it is separated by air-passages 24. The fruit-vessel 6 rests on the top of the dividing-wall, which is cut away to allow steam to pass outwards. The central part of the base of the vessel 6 is raised and the outer part perforated. The water-container 3 may be a separate metal vessel placed within the central passage of the earthenware annular vessel 4. In another form shown in Fig. 8, the vessel 4 stands on a flange 28 in a pan 29, and steam passes through a central passage 34. The vessel 4 is closed by a lid 33 and the fruit is placed in a cloth 32 over a sieve 30. Water may be added to the pan 29 without disturbing the apparatus.
