26,432. Veeman, E, March 13, [Convention date]. Cheese. -A jacketed cheese-vat is fitted with means for breaking-up the curd and for separating the whey. On a central shaft 17 supported on a foot-step bearing comprising a journal 19 carrying a steel pin 20 and turning in a sleeve-piece 21 fitted into the bottom of the tub 10, in which the vessel 11 rests leaving a space between for steam or hot water, are mounted cross-pieces 22, 29, 30 which carry auxiliary shafts 24. The lower cross-piece 22 has the lower front edges of its arms sharpened to form scrapers, and to the shafts 24 are fixed frames 25 carrying removable blades 27, 28 vertical on one side and horizontal on the other, the surfaces of the latter being oblique so as to assist the scrapers 22 in lifting the curd. The shaft 17 is rotated by a bevel gear-wheel 35, and the shafts 24 are driven through a gear-wheel 33, loose on the shaft 17, and pinions 34. The blades 27, 28 act as stirrers during the heating of the milk, but are stopped during coagulation, being afterwards rotated at increasing speed for from 45 to 60 minutes to cut and break up the curd, some of the whey being drawn off meanwhile. The blades and frames 25 are then removed with the lower part of the shafts 24 by raising sleeves 42 which form couplings between the two sections of the shafts 24. The cross-piece 22 is next raised and may be suspended from the cross-piece 29. A perforated curved blade 50, Fig. 4, is secured to the shaft 17 by passing the slot 52 over the flats 17<a> on the shaft, turning the blade slightly, and inserting a key in the recess 53, handles 54 facilitating manipulation of the blade; and the shaft 17 is. again rotated. The convex surface of the blade carries the' curd forwards and deposits it around the circumference, the whey passing through the blade and being drawn off from the centre by a pipe 55.
