17,122. Griffiths, R. M. July 23. Mincing.-A mincing-machine comprises a cylindrical container closed at the ends by screw caps through one of which passes a knife - bearing spindle. Fixed to the spindle 5 is a knife in the form of a wheel 8 haviug no rim and the spokes formed with two cutting edges. Arranged loosely on the shaft is a similar knife 7 having a rim, lugs 9 on which engage grooves in the container 10. The spindle is screwed and slides on a feather on a shaft 11 which is driven through bevel-gearing from the shaft 18. In operation, the cap is removed and the container nearly filled with meat, the cap is then replaced and the shaft 12 rotated, the knives moving forward in the cylinder and the meat being cut up by a scissors like action between the rotary and non-rotary knives. When the knives near the end of the container, the shaft is reversed. After mincing, the cap 3 is removed and stirrers substituted for the knives, or a separate shaft carrying stirrers substituted for the shaft, and the contents seasoned and mixed. This may be done by a hand instrument. A spout may then be attached to the cap 3 or a spout-cap attached and the contents fed through the spout into a sausage by a piston introduced the opposite end. The cylinder may be reciprocated instead of the knives, or more than one pair of knives may he used.
