8932. Holmes, L. W., [Ellis, C.]. April 15. Malt compositions.-In the preparation of a dog biscuit, a composition is employed which comprises the products of reaction of diastase on flour and meat. According to one mode of preparation, fresh beef is comminuted or ground very small, cooked, and mixed with flour, preferably of a highly glutenous nature, bone meal and corn meal. Malt or malt extract is added to waste milk, preferably at a temperature of 40‹ C., and the mixture is introduced into the mixture of flour &c. Salt and molasses are added, and finally sufficient water to produce a dough of suitable consistency. The mixture is thoroughly kneaded in a pan heated to 60‹ C. by a steam-jacket. Diastatic action ensues, and, when the starchy elements have been completely converted, the dough is rolled out into sheets and cut into cakes or biscuits. In other forms of the composition, glucose or similar saccharine matter may be substituted for molasses, chopped dried vegetables for bone meal, and oatmeal, peas, rye flour, or ground beans, for corn meal; milk, molasses, or other saccharine matter and salt may be omitted.
