Invert sugar.-In the purification of saccharine liquids by diffusion and electrolysis, the acids &c. liberated are used to invert and bleach the sugar, while the cations are collected in a porous pot &c. Citric acid &c. may be added, and the inverted liquid may be neutralized, or the acids may be partly removed by electrolysis or diffusion and the remainder neutralized, with the addition of calcium citrate if desired. Specification No. 2631, A.D. 1880, is referred to.
