2591. Reynaud, G., and Frestadius, V. H. Feb. 1. Spirits; yeast.-The residue from whisky or like stills, known as pot-ale, is fermented by special yeasts, occurring on wild berries, gathered in woody and peaty districts, especially on berries of plants belonging to the family Vaccinium. The fermentation is preferably conducted at 38‹ C. The potale may be mixed with molasses before fermentation. Rum is obtained by fermenting pot-ale and sugarcane molasses. The residue, after distilling off the alcohol, is used as a food for animals, or as manure ; or is burnt to obtain potash. Pot-ale is addel to any saccharified mash to provide food for the growth of the yeast.
