Abstract

3650. Bergell, P. Feb. 14. Food preparations.-Bread &c. poor in carbohydrates is prepared from a mixture of ground wheat gluten and germ flour, preferably rye germs, from which the starch may or may not be dissolved by the use of suitable ferments. The flour is mixed with the necessary quantity of water and a large amount (5 per cent) of yeast and baked. To reduce the amount of starch, the germs or the flour obtained therefrom may be digested with an infusion of malt at 50‹C. After a few hours the germs or flour are pressed or treated centrifugally and immediately used for the manufacture of the bread.
